I don't know if it's necessarily a decline in interest, but rather, an increase in responsibilities. As a new student, you have very few responsibilities beyond rent and the occasional utility bill, so you don't really need to worry about anything except your PhD project. But things happen (mortgages, marriages, etc.) and you realise that going in to the extremely competitive world of academic research might not be such a good risk to take.
